This chapter provides several shorter portraits of Kalymnian kitchens and cooks, including male cooks. It considers issues of temporality in the kitchen, concerns over health and “local” cooking, food generosity, and the oppressiveness of time. These shorter explorations are meant to suggest the ways that cooking ethnography can reveal key issues in the way people frame their values and practices.
